Lunch (or Breakfast) — packed with Punch!
Summertime offers great opportunities to include a variety of flavors, textures, colors and freshly grown foods. This meal is nicely balanced with macro-nutrients — Carb, Protein and Fat — each providing energy from short to long-term. Avocados right from my yard provide a great source of mono-unsaturated fat which keeps the skin glowing and lowers the unhealthy cholesterol. Organic parsley is a great detoxifier and source of beta-carotene, which helps with night vision.
The other nutritious foods include organic turkey bacon, olives, walnuts (I soak and roast my own to reduce compounds that impair digestion), lemon hummus, carrots and a toasted coconut tortilla which is a good fiber source.
