Waldorf Salad

Serves 2

  • 1 apple, chopped

  • 1 stalk celery, chopped

  • 1 teaspoon mayonnaise, diet, low-salt

  • 1 tablespoon plain Greek yogurt or Kite Hill plain Almond Greek yogurt

  • ½ teaspoon honey

  • 1 tablespoon walnuts, chopped

Directions:  Mix all ingredients.  Chill before serving. 

Diced Apple Cake

16 servings

  • 2 medium apples, chopped (skin left on)

  • 2 tbl sugar

  • 1 egg

  • ¼ cup grapeseed or walnut oil

  • ¼ cup applesauce

  • 1 tsp vanilla

  • 1 cup GF flour

  • ½ cup Benefiber

  • 1 tsp xanthan gum

  • 1 tsp baking soda

  • 1 tbl cinnamon

  • ½ tsp salt

Directions:

  1. Add sugar to apples, letting stand for 10 minutes

  2. Blend egg, oil, applesauce and vanilla to apple mixture

  3. Stir together all dry ingredients and mix into apple mixture

  4. Beat just until smooth.  Do not overbeat

  5. Bake 350 35-40 minutes in 8x8 sprayed pan

Serve with 2 tbl vanilla mousse (recipe in Sweets and Treats) and 1 tbl walnuts
